This is my first post, so thought of starting with something sweet, so here goes Carrot/Gajar Halwa to sweeten your mouth buds. This Halwa is prepared in a slightly different manner so as to preserve the crispness of the grated carrot and the taste is awesome. Ingredients:
8-9 medium size Carrots finely grated
3-4 tablespoon ghee/butter
4-5 tablespoon sugar
1/2 cup khoya/mava/condensed milk (If khoya is not available,you can use condensed milk instead and adjust sugar)
1/2 teaspoon cardamon powder
1/2 cup nuts and raisins
salt to taste

Method:
- Steam the grated carrots in the microwave on high for 5-6 min, stirring in between.
- Alternatively the grated carrots can be steamed using a pressure cooker for 4-5 min without weight.
- Heat ghee and fry nuts till slightly brown, and keep it aside.
- In the same ghee add cardamon powder- this will increase it's aroma.
- Stir in the steamed grated carrots for few minutes till they look shiny.
- Add crumbled khoya/condensed milk and cook over a low flame.
- Add sugar, salt,as the sugar melts liquid will release, stir fry until liquid evaporates.
- Put off the heat,add the fried nuts and raisins, mix thoroughly. Serve hot!
Note:
- The steaming process gives a nice crunchy effect to the gazar halwa ,and this also avoids over cooking of the carrots thus preserving the taste and nutrition.
- Condensed milk can be substituted for khoya, in this case the amount of sugar should be avoided as Condensed milk has some sweetness to it.

Kavita, tks for dropping by..glad to hear u tried out pav n cookies. Pav dough has to rise well to achieve the fluffiness. PUnch it down the first time it rises to smooth dough, roll into balls n arrange on baking sheet, let it again rise (this is the secret to fluffy pavs) leave it near a warm area covered. I got it right only after several trials. The temperature of place, ingredients, oven temp. etc play an important role in getting it right..so do try again.
